Easy Peasy Lemon Squeezey Pancakes!


Pancake Day has been celebrated by Britons for centuries.

Also known as Shrove Tuesday, traditionally the idea of Pancake day, is to get rid of any left over rich or indulgent foods before the beginning of lent. But these days it’s become a great opportunity to use up that half empty bag of flour that has been sitting in your cupboards for months and treat yourself to some of your favourite sweet or savoury treats.  

We have put together an easy peasy lemon squeezey Pancake recipe and some of our favourite, sweet and savoury toppings.

Easy Peasy Lemon Squeezey Pancakes


100g Plain Flour

2 Large, free range eggs

300ml Milk

50g Butter, melted. Plus a little extra for frying

1 pinch of salt


Making the batter: Mix the flour and salt in a large mixing bowl.

Create a small well in the flour and crack the eggs into the middle of the well.

Add a 3rd of the milk and melted butter and whisk until smooth and lump free.

Slowly add the remaining milk until the batter is smooth and at the same consistency of single cream.

Cooking the Pancakes:  Heat the pan with a little butter on a medium heat. Once the butter has completely melted, pour the pancake batter into the pan. Move the pan around to create a thin even layer.

Leave to cook for 30-60 seconds and then turn. Or depending on how brave you are feeling, flip it!

Once turned, cook for another 30-60 seconds until golden brown.

Continue this process, serving the pancakes as they are cooked.


Now add your favourite toppings.
